The Violet Butterscotch Blondie

Step aside, dry, flaky, blondie wannabes. The ultimate butterscotch blondie has made its way to town courtesy of Claire Ptak, baker of London-based Violet Cakes - and yes, it is here to stay. I had always wanted to have a go at making the perfect blondie, but stumbling upon flawed recipes coupled with the slight fear or venturing beyond cocoaworld, did scare me a little. To me, traybakes had always meant conventional brownies, and anything beyond that would prove an attempt way beyond my reach. But it wasn't until my sister so graciously shared the recipe to this treasure that made me go, "Wow, I had no idea brownies had such cool cousins." Cross-section: Peanut butter, baked caramel shards, delightful explosions of butterscotch. This variation involves a caramel twist - where one would have to make caramel beforehand, spread it on a tray to harden, smash it to bits, and then scatter them atop the blondie batter just before baking it in the oven. ...
