Screwpine Diaries

Screwpine, also fondly known as pandan where I'm from, is one of the most precious plants that could ever exist in a garden. I have to admit, this leaf has become my favourite natural local ingredient to work with, especially when paired with gula melaka (palm sugar) and a dose of toasted desiccated coconut. I most recently came up with this ondeh-ondeh cake having gathered inspiration from the above ingredients, and I thoroughly enjoyed every step of making this layered dream come true.

Components include: a pandan chiffon sponge, gula melaka cream cheese frosting, and lightly toasted fresh desiccated coconut stirred in gula melaka syrup. Didn't quite believe the hype it caught but was pleasantly surprised when I tasted it myself. Dare I say, a lip-smacking pleaser.

The Ondeh-ondeh. Don't mind the varicose veins.
